No offense to my mom, but I love this recipe. It's pretty much all I eat during the winter. 
Mrs. Nicholas' Famous Split Pea Soup:
Step 1: 1 whole onion finely chopped, 3 carrots shredded finely, 3 stalks of celery chopped finely (I would just put them all in the food processor) Sauté and sweat down these 3 ingredients.
Step 2: 3 cloves of garlic finely chopped, add to the mixture and sauté a few minutes.
Step 3: Rinse 1 bag of split peas, add to pot. Add 3 cans of chicken broth, bring to boil.
Step 4: Add 1 chicken bouillon cube and 4 cups of water. Add 3 bay leaves. Bring to simmer for 1 hr. Check frequently to make sure it doesn't dry up, you may need to add water depending.
Step 5: When you serve the soup, have small pasta (elbows, whatever...) already cooked and add a spoonful to each bowl.
Serve with parm cheese! (you know how I love my cheese!)
